Merry Christmas! How about a holiday dessert that is marginally healthy AND includes alcohol? LET’S DO IT! While I am not a health nut and for as much as I like chocolate, I like alternatives to the standard holiday goodies. This is what you’ll need:
1) 3 to 4 bananas
2) Coconut oil
3) 2-4 tablespoons honey – if using a flavored honey, use coconut or cinnamon, if using a monofloral, try asfodel, wildflower, star thistle, or orange blossom
4) 3 tablespoons coconut rum
5) Ground cinnamon
Even I can make this recipe without the use of fire retardant clothes or a check list. It’s literally dufus-proof. Use extra alcohol if you have kids. I recognize you may need to just ‘check-out’ once they pound down their 16th sugar cookie. Nothing says Christmas like kids running amuck and parents drunk on rum infused bananas.
Peel and slice bananas into 1-inch chunks. Soak bananas in mixture of coconut rum and honey for 10 – 20 mins.
Melt enough coconut oil to cover the bottom of the bottom of a non-stick pan and heat over medium heat. Once heated, add banana slices and cook 1-2 minute on either side until golden brown. While this is happening, take the Honey & coconut rum mixture and drizzle over top while at low heat. When sizzling subsides, sprinkle with a cinnamon. Serve with nut infused ice cream or hazelnut gelato – single scoop please. Let’s exercise just a little self control. It’s the holidays and you’ll probably be eating again in hour anyways.
